Cooking with CESI: Slow Cooker Honey BBQ Chicken

If it seems like you are always on the go and mealtimes are stressful because “who has time for cooking,” then this recipe is for you! I get it — I work full time and I have 4 active kids ranging from 12-17. Mealtimes are stressful around my house because everyone is just getting home and we are all worn out from the day. Enter the slow cooker…AKA, my secret weapon. I love that I can take 5-10 minutes after dinner and throw together a healthy meal for my family and go to bed knowing dinner is in the bag for tomorrow. I recently ran across this yummy and inexpensive recipe recently from Uncommon Designs and it looks like a total winner. Shredded BBQ is usually a favorite at my house, and I’ve found that making extra usually means I can repurpose it into at least one additional meal. A favorite of my family is BBQ nachos — I’ll save that one for another post.

I estimated the cost for this meal at less than $8 if you have a couple of the staple ingredients on hand (brown sugar and worcestershire sauce). The version you see listed serves 4, but you can easily add more chicken to stretch it further without having to add a lot of extra sauce. This makes the meal $2 or under per serving. We love a bargain meal!

SLOW COOKER HONEY BARBECUE CHICKEN SANDWICHES

Ingredients

  • 3 boneless skinless chicken breasts
  • One 18 ounce bottle Honey Barbecue Sauce (I use Sweet Baby Ray’s)
  • 1/2 cup Italian Salad Dressing
  • 1/4 cup brown sugar
  • 2 Tablespoons Worcestershire sauce

Instructions

  1. Place chicken in a slow cooker.
  2. In a bowl, combine the barbecue sauce, Italian dressing, brown sugar, and Worcestershire.
  3. Pour sauce over the chicken and cover with lid.
  4. Cook 6-8 hours on low or 3-4 hours on high.
  5. Remove chicken from the slow cooker and shred using two forks.
  6. Return the chicken to the slow cooker to coat with sauce and serve on kaiser rolls. Top with slaw and serve with chips for a complete meal!
