Cooking with CESI: Vegetable & Black Bean Tostada

Finding recipes that are both healthy and inexpensive can be a tall order. If you like to combine these two items, look no further than these tasty veggie tostadas. I made them for my family and my kids enjoyed them! You can purchase the ingredients  for less than $12 to feed a family of six. That’s budget-friendly eating that you can feel good about!

Vegetable & Black Bean Tostada

2 cans black beans, drained and rinsed
Pico di gallo or salsa of choice
2-3 bell peppers cut into strips
1 cup fresh or frozen corn
1 large onion cut into strips
12 corn tostadas
Shredded cheese
Cumin, garlic, turmeric to season
1 fresh lime
Add chopped onion and pepper to a skillet with a small amount of olive oil. Season with garlic, cumin and tumeric and cook until tender (roughly 5 minutes).  Add drained black beans and corn and cook until heated through. Add the juice of one/half of a lime.
Serve over warmed tostada shells and sprinkle with pico de gallo or the salsa of your choice and  shredded cheese. Serves 6
