Our recipe this week is nutritious, low carb, meatless and believe it or not, is still one of my family’s favorite summer meals! I have four children ranging in age from 11-17 and only one of them didn’t care for this meal. Roasted Vegetable & Goat Cheese Toasts
This recipe can be thrown together in a hurry — it takes roughly 3o minutes to prepare. I estimated the cost for 6 servings at approximately $16 dollars for a total of $2.66 per serving (costs will vary by store and geographic area).
Ingredients
- 1 loaf multigrain bread, cut into 12 slices
- 2-3 zucchini, halved lengthwise and sliced
- ½ (16-oz) pkg mini bell peppers, thinly sliced
- ¾ cup chopped red or white onion
- 2 cloves garlic, minced (or jarred minced garlic)
- 3 Tbsp olive oil or Italian dressing in place of oil
- 1 (10-oz) container hummus of your choice — I used garlic hummus
- 1 (4-oz) container crumbled goat cheese
Instructions
- Preheat broiler.
- Place bread slices on a large foil-lined baking sheet and broil until golden on both sides; set aside.
- Combine zucchini, bell peppers, onions, mushrooms, garlic, oil, ¼ tsp each salt and pepper on the baking sheet; spread in a single layer.
- Broil 10 minutes or until browned on edges; stirring halfway through cooking.
- Sprinkle with ⅛ tsp salt, toss to coat.
- Spoon hummus evenly on bread slices, top with vegetable mixture and sprinkle evenly with goat cheese.
