Summer is a busy time for a lot of families. With summer camps, vacations and trips to the pool, it can get expensive too. So why not cut costs at the grocery store? Here are five cheap summer meals that will cost just a $1 per serving — or less.

Pasta Primavera with Summer Vegetables

Shopping in season is one way to score fresh produce for less. And, during the summer, grocery stores are full of produce deals as farm fields are overflowing with everything from juicy tomatoes to sweet corn.

A simple pasta primavera takes advantage of all of this seasonal produce at an affordable price. Pick up a box of pasta for $1. Then, chop up some fresh vegetables and garlic. Zucchini and summer squash, which you can buy on sale during the summer for about $1 per pound, are particularly frugal and tasty summer options. For this dish, you’ll also need a 14-ounce can of chicken broth, which will cost around $1.

Corn and Bean Wraps

Pick up a can of corn and a can of beans, which each cost $1 or less a piece. Mix them together with a little salsa and cheese. You can pick up a jar of salsa for $1 and a package of shredded cheese for $2.50 or less if it’s on sale — and you’ll have some of both left over after making this dish. Cheese Quiche

Make this ahead of time and serve it cold. A box of pie crust mix, which requires only water to make, is just $1 — and you’ll be left with a second crust to use. Then you’ll need three eggs, some cheese, chopped onions and a can of evaporated milk. The quiche, which serves eight, costs about $5 to make.

Pork Carnitas

For this hearty meal, you’ll need a slow cooker, which is a must for just about any frugal kitchen. Pick up a three-pound boneless pork butt for around $2 a pound or, if you’re lucky, $1 per pound when it’s on sale. Chop up an onion and a little garlic and sprinkle the meat with some spices that you probably already have in your cupboard. Serve with tortillas.
