Cooking with CESI: Pumpkin Spice Latte

It’s that time of year again: pumpkin EVERYTHING! And it just wouldn’t be complete without pumpkin spice lattes. I love them but they’re on the pricey side. For a Tall at Starbucks, you’ll pay anywhere between $4.25 and $4.75. As sweet as they come, the price tag can leave something to be desired. With this quick and easy recipe, not only can you make 2 for the price of 1, but you can also adjust the sweetness to your heart’s desire.

Chances are you already have some of these ingredients on hand but we estimate this will only cost you around $2 per serving. This recipe actually includes pumpkin (chances are your local coffee shop doesn’t) and you can adjust the sweet and spice so it’s just right.

Ingredients:

  • 1 cup milk (I use almond milk but it’s yours to customize!)
  • 1 ½ tablespoons sugar (I like to use light brown)
  • 2 tablespoons pure pumpkin puree (not pumpkin pie mix)
  • ½ teaspoon of pumpkin pie spice
  • ¼ teaspoon of vanilla extract
  • ½ cup strong coffee or espresso
  • 2 tablespoons of Cool Whip

Directions:

Combine milk, sugar, pumpkin, spice, and vanilla in a bowl and stir. Microwave for 1 to 2 minutes until hot (you can also heat on stovetop). Grab 2 cozy coffee mugs (or 1 if you don’t want to share) with your coffee or espresso and pour the milk over it. Top it with the whipped cream and then sprinkle a little more pumpkin spice on top.
